Summer Slaw

Bright, crunchy and full of flavour, this Summer Slaw is perfect for picnics, barbeques, or as a flavourful side dish. It’s light, refreshing and easy to make. | 30 mins |   Serves 5-6

Ingredients

  • 6 cups of a mix of red and green cabbage, finely sliced
  • 3 large carrots, grated
  • 1 cup roasted and salted peanuts (could also use cashews or sunflower seeds)
  • ½ red or yellow capsicum, finely sliced
  • ½ cup fresh herbs (eg, parsley, basil)
  • ¼ cup toasted sesame seeds

Dressing

  • 4 Tbsp olive oil
  • 2 tsp sesame oil
  • 1 clove garlic, crushed
  • juice of 1 lemon
  • 1 cm ginger, finely grated (optional)

Method

Finely dice cabbage and place in a large bowl. Add grated carrot, herbs, peanuts and capsicum—toss to combine. In a jar, add dressing ingredients and shake until blended. Pour over cabbage mix and toss. Just before serving, garnish with toasted sesame seeds.
