Summer Slaw
Bright, crunchy and full of flavour, this Summer Slaw is perfect for picnics, barbeques, or as a flavourful side dish. It’s light, refreshing and easy to make. | 30 mins | Serves 5-6
Ingredients
- 6 cups of a mix of red and green cabbage, finely sliced
- 3 large carrots, grated
- 1 cup roasted and salted peanuts (could also use cashews or sunflower seeds)
- ½ red or yellow capsicum, finely sliced
- ½ cup fresh herbs (eg, parsley, basil)
- ¼ cup toasted sesame seeds
Dressing
- 4 Tbsp olive oil
- 2 tsp sesame oil
- 1 clove garlic, crushed
- juice of 1 lemon
- 1 cm ginger, finely grated (optional)
Method
Finely dice cabbage and place in a large bowl. Add grated carrot, herbs, peanuts and capsicum—toss to combine. In a jar, add dressing ingredients and shake until blended. Pour over cabbage mix and toss. Just before serving, garnish with toasted sesame seeds.
